And note I was only asking what went into the un-used area. I haven't even gone searching for the new panel shown in this thread.
No, I haven't ordered from them. That's not the point. They provide the part numbers. You asked about part numbers for the System Sentry.

Yes, you asked what went in the un-used area. That area exists because they used it for the system sentry on some Wagoneers. On everything else, it's just empty space. You can put switches, idiot lights, small gauge(s), whatever you can think of into that space if you want. Or do nothing.

Since you have to run wires to the relays from the switches and they use such low voltage I used irrigation wiring which have eight diff colored wires wrapped together, so you can pull them easier under the dash through the fire wall to the engine bay over to the 4 relays that are for each set of fog lights. He will have two pair on the front of the roof rack one light on the rear of the rack and one pair of yellow fog lights in the front above the bumper. You would run heavier wires from the battery fused to each relay then from the relay heavier wires to each set of lights. The switches just turn them on by way of the relays.

I've seen relay/switch boxes made using cat5 quite often. Same idea.

Yeah, when you install irrigation systems you have a lot of extra wire laying around, so why not?
