My cherokee just died on me while i was idling at a stop sign and now its been idling really weird. Could it be the IAC valve or something else?

You need to do some investigating/diagnosing. IAC is a great possibility. Pull it and clean it.

When was the last time you did a tune up?

When was the last time you changed your fuel filter? Ran injector cleaner?

When was the last time you did your air filter?

Hook up a code reader and see if it's throwing any codes or has any stored codes. Do you have a check engine light on?

Certainly could. Best to know what you've got Install some NGK plugs, Napa Premium wires, cap and rotor.

I agree that a complete tuneup is really the best starting point for any driveability problem.

The importance of secondary ignition parts cannot be overstated.

If you're chasing a problem and you have old tuneup parts, you might just be chasing your tail. Simple stuff first. Always.

i agree with previous posts. clean everything up, catch up on maintenance, and then go from there.

my guess would be either the iacv or something with the fuel system.

make sure a fuel filter and some injector cleaner is part of your tune up.

Ok so since this was posted ive cleaned the iacv and throttle body, put in NGK plugs and a new NAPA premium wires. Ive also put a fuel treatment and injector cleaner into my gas tank with a full tank of gas. It still takes an extra second to start after sitting for a while (unless I prime it first) but it hasnt died on me yet... (Keyword YET) is there anything else I could do to try and prevent this from happening?

Cap and rotor?

Check to see all your intake manifold bolts are tight.

Lift the old one off and reinstall the new one so it's seated down like the old one was.
