Angry Overheating replaced head, fixed, now running hot again

I was overheating so I replaced EVERYTHING and I mean it.. the only thing I didn't replace was the damn engine block. Anyways yesterday was the first day driving it after all the new parts (including cylinder head, and new head gasket) and it drove great, and stayed at 180-190 mostly. You could see the gauge plummet as it hit 195. And then steady around 190.

So today I was driving it and the temp gauge started climbing but hardly bobbed around that much. It started getting into the 220s. WHY WOULD IT BE PERFECT YESTERDAY DRIVING IT ALL DAY YESTERDAY IN ALL CONDITIONS then TODAY I drive it once and it ****ing runs hot!!??

I have put so much damn money into this thing why won't it quit overheating?

Could my new aftermarket thermostat have failed already???

I have no signs of a head / head gasket problem, never have, EXCEPT OVERHEATING.

Will someone please save me from this overheating nightmare!!?

If your depending entirely on the dash gauge it's probably not overheating at all. Any idea what year this thing is? Why triggered the replacement of "everything" anyways?

Get a thermal IR gun to verify temps before tearing back into it again.

It could be a sending unit or the gauge itself.

The fact that it keeps bobbing around sounds like there may be air in the system. Have you tried burping it?

Year would be extremely helpful.
FWIW, I will no longer use aftermarket thermostats. Even Supeer Stant. Had 3 failures with them. Pony up and buy a Mopar 83501426 from the dealer.
