Newbie with a couple of questions

I have an AW4 that has worked faithfully without problem for all of it's 225,000+ miles, and I've never pulled the transmission pan. I only drain and refill regularly.

Use the lubricant and viscosities recommended in your owner's manual. It's my understanding that most manufacturers switched to using 10W-30 engine oil because testing showed that there were too many chemicals used to achieve such a wide multi-viscosity and too little actual lubricant. Now they realize that it is most important to get the lubricant to the engine parts as soon as possible after start-up. 5W-30 is recommended in cold climes I believe. Many new engines use 0W-20 year round.
