While running if I unplug the IAC is it suppose to make a difference?

Probably not enough for you to notice. Have you tried to manually push/pull on the pintle (the end plunger type piece)? If so it could be already damaged as the stepper motor is very fragile.

I'll offer another viewpoint.
If you're not hurting for money, just replace the IAC, MAP, and TPS all in 1 shot.
I think they are all a simple replacement, unless you strip out your screws.

This will save you time & money, and get you to work for sure.
In the long run, that's just fewer things that will eventually break and leave you stranded.
It pays to ensure your car's gonna get you to work, every single day, above all else.
