Any gps that allows you to save waypoints is fine, most will track where you have been. Mine is an older magellan color that is great,I also have their magellan topo that is a software pack that allows you to upload very detailed topo maps.
The newer ones are much better than the one I have, and mine is more than I will ever need.

there are really only two types of GPS units.
you have the cheap city nav units that are for street nav and don't usually have the option to save tracks, unless you find a good crossover.
sure they show you where you've been, but that doesn't stay on there for long.
then you have handheld units, these are made for hiking, biking, climbing, and even good for nautical.
these units usually don't do street nav at all, but will record and save your tracks. so you just turn on tracking at the trail head, and stop record and save at the end of the trail, name it and upload to your topographical computer program.
i have had magellan triton 1500 which i didn't like and returned it.
i have also had a lawrance, which was old school and very good unit.
but my favourite is definitely garmin, i have the map60 cx. it's very good and quite easy to use.
you could also get a crossover like the garmin colorado. they are usually double the price of a garmin nuvi street nav unit, but you need the right tool for the job.
garmin for the win.
i have both in my jeep.
