I installed a full gauge cluster today, as well as new oil pressure and coolant temp sending units. Everything seems to be working well, I even figured out how to reset the new odometer to the old one, so the mileage even reads correct and the dash looks so much better now...
I'm curious as to what the normal operating temperature should be. The temp gauge is consistantly on the line between 100 and 210 degrees. I'm not concerned, but that tells me it's near 155 degrees which seems a little cool to me. I thought most engines want to be in the 180-190 degree range.
Should run about 195*. I've found the best thermostats, although pricey, come from the dealer.
Swapped out the existing thermostat with a new 195 degree from NAPA. $8 plus the gasket. The thermostat I removed says 180 degrees. Photo shows where my gauge currently resides when fully warmed up. A bit hotter than before. Though the gauge appears to not be accurate, at least now I have a baseline.

Chrysler and AMC Jeep do a great job of producing amazing vehicles, but what the engineers think is logical bewilders me. Like the gauge middle not being 180 or why is the alternator below the mechanical fan and not accessible like on the surface of the engine compartment like normal vehicles or why there were certain bolts missing from my jeep since it rolled off the dealership lot 26 years ago. The list goes on and on but we still love em!!
