How bad is it rubbing? Drum brakes when properly adjusted should have some drag. Take it for a ride and break em in a bit, if they are still too tight its time to tear into them again if your adjuster is fully backed off.

Did you put the shoes on backward?That may cause it to rub.

jeep brake shoes come in 2 different sizes: 9" and 10", perhaps you got the wrong size if the adjuster is out all the way
