I was looking at adding a lift to my jeep and getting rid of the blocks. could I put dodge dakota leaf springs on the back and get close to 5in?

Most people using another vehicles leafs use it making a bastard pack. As for direct fit? not sure, but you would need new shocks and worry about driveline issues. if its older, 4.5 is the approx (ie give or take) before you would need a SYE, newer is about 3 inches.
I reread and saw you want to replace your blocks, so you probably already have the shocks and all, right?
Are you staying the same height, just going blocks to better springs, or are you increasin height as well? And look on the thread above here about junkyard parts that will fit. they have a lot of nice stuff there to help, and people who answer these kind of questions specifically.
And lifting, even changing a lift, wouldn't that be... advanced tech, as it is not OEM? lol
