So I was going to go to the junkyard to get a HP dana 30 for my 2000 but all the ones by me want 150+ (yeah i know BS) anyways i was focusing on a 97-99 to get the larger Ujoints but finding one is tough. Now I have a lead on a dana 30 out of a 91 it is a NON-disconnect. Now Im willing to compormise on the Ujoints but my question is...Will my Brake calipers bolt up to the older knuckles? And any other things I should look for?

Just grab any non disconnect D30 housing with the proper gear ratio. You can swap your shafts and knuckles out off your current axle.
Now would be the time to install new balljoints.
For the record. All ABS as stated earlier or 95+ D30 has the larger 297 u-joints.
