Default cooling issue

now i know everyones had cooling issues before espically on pre-97 XJs or so ive heard anyway....but the issue i have is nothing that ive ever seen before and nothing that google has answered nor can anyone ive talked to i made a video of it this morning cause its wayy easier to show all of you guys and girls versus trying to describe it. here ya go

and now a few minutes later (roughly 10)

and i know its not oil its fuel cause its running rich and also the rattling that you hear is my exhaust pipe.

96 XJ classic, No cat, 3.5" lift, Cold air intake 2.4L inline 4 injectors from a stratus/neon, everything else mostly stock.

havent replaced it because i wouldn't think within 2 months it would go bad. it started acting up and that's where i started about 2 months ago along with a fluid flush and change.

yes the fan is on when the sensor is unplugged. the temp wont move at all no matter how long it runs because obviously its not getting a reading at all, so while its hot and running like garbage the fan stays on, im thinking as a safety
