What do you mean with 'adjusting the IAC"? As far as I know it doesn't need any adjusting.
Does is also stall when driving , or just stalling after start up while idling? Warm or cold the same?

Slowly going into stall suggest getting deprived from air, fuel, or both.

If the problem didn't start until you gave it a tune up I would start by checking and make sure you got it all back together correctly. Also make sure that you didn't knock any thing loose by accident. What brand of plugs, wires and cap did you put in. I know that our 4.0's run better on Champion plugs gaped at 0.035. I once tried using some Bosch platinum plugs and it ran like crap. Also the cap you put in does it have the brass tips? Those always work much better too.

I used ngk copper cores autolite wires and i don't know the brand cap but it does have brass terminals. Its weird it fires up smooth then roughs out slowly and then stalls. i don't know the gap size on the plugs but the truck reacts mint when i give it gas

This.

If you have symptoms only after performing work, then "cause and effect" is in play and you gotta go back and check your work, as that is likely involved.

Did you gap the plugs before installing? Never trust the gap from plugs out of the box.

When you replaced the IAC, did you clean the throttle body?

Hmm, I have trouble linking that with your stalling at idle, where it would otherwise drive without issues...but hey, if it solved the issue..
