Don't - it's very dangerous.
The shoulder straps attach to the belt. In an accident the straps pull the lap belt up into your belly, giving you massive internal injuries - in even a small crash.
You have to use a sub belt to keep it down around your hips - 5 points. it's a real PITA, so you'll cheat.
The 3 point stock belt is much safer than the 4 point - the lap belt stays put - the FEDS researched them all extensively.
5 or 6 point belts are the safest of all -- but too much trouble to use all the time
The makers of the 4 point belts don't tell you this - talk to a paramedic with racing experience!

Before you go through the headache of trying to install them you need to check what your local laws say about them. I do know that some places it is illegal to use them on public streets and highways.

What should I look for in a harness?
Assuming I use a 5 point harness for the reasons listed above, Im still at a loss as to size of webbing, layout of connections, etc. There are a lot of different options out there, and I had to wonder if some were more decorative than safe.
This is strictly for off road, trail use, with speeds no greater than 35mph (and thats pushing it)
I weigh about 300lbs
I am currently using stock seats, but have some aftermarket seats I might put in later.
I will be installing a roll cage and a bar across the back to attach the harness. I would like to get the harness ahead of time to lay out the cage.
2" webbing? 3" webbing? Everything connect down at the waist? I didnt realize that there were so many options and so little information.

4 point harness NEVER only a 5 at the least then you must have a seat designed for them to work properly. 99% the shoulder harness is meant to be mounted to the roll bar for proper pull angle. In a stock floor pan car there several ways the XJ's will need a different mount.
They will need a 3/16" plate at the least 6x6" at what ever angle they need to be cut. Then bolt to those for the other 3 mounts.
Harness's are only good for so long and the date is on them so be aware if buying them used. There are a lot of outdated ones being sold to people who don't know this till they get them.

3" belt at minimum. And you definitely want as much padding on the shoulder straps as you can find.
You also want the traditional style buckle. Not some button clasp crap.
