Default 2000 Xj 215000 miles

Is that too many miles? Do people take these higher than 300,000 miles with no major engine swaps?

They really don't ask for much. Regular oil and filter changes, keep the cooling system clean and working efficiently. Don't let it overheat.
The maintenance schedule set forth in the owner's manual is pretty good to follow for other stuff.
Other than that it's pretty much repair or replace as necessary. There really isn't a schedule per-se for things like Crank sensors, u-joints, etc because they don't have a finite lifespan. Some easily last the life of the vehicle.
