I don't have the V6 anymore, but mine had a computer controlled carburetor. My educated guess is that they provide data for that computer which is behind the instrument cluster

Can't say about the V6 but my '88 4.0 has 3.
On the back of the cylinder head controls the temp gauge (or light if no gauge) in the dash.
The one in the radiator controls the electric fan on the radiator. The electric fan also comes on with the AC.
The one in the block by the driver side motor mount, sends signals to the ECU. Later XJ's have this one in the thermostat housing.
Are you sure you have 3?

I went from the 2.8 to this 4.3. Save the sensors and plugged them in. I didn't see any computer controlled wiring for the old carb that would need heat sensors. The fan was mechanical and needed no sensors either. I have them located on the new motor in the same area's as the old motor. Just not sure which one's do what?
