If all you are doing is changing U bolts and not taking anything else apart, then you don't have to worry about a thing. Just jack up the rear by the axle and keep the weight of the rig on the axle. It won't come apart on you

I’m changing bf the u bolt plates for the dirtbound offroad ones for bump stops. I’ll jack it up and put axle on jack stands and pull wheels off should be good no?

You can do it without a jack or jack stands, but it'd be much easier if you use them to at least get the tire out of the way.

And do one side at a time, so if somethign DOES bump the body when you have 1 side apart, the opposite side will hopefully keep the body from sliding off the axle.

Should be. May want to do one side at a time. Chock both sides of front wheel.
If removing both rear wheels than chock front and back of both front wheels. Removing and installing u-bolts requires a fair amount of twisting and torquing, the jeep needs to be secure enough to handle these forces.
