But, it seems to me that most switches only have two prongs on the back side for wires. So I need three for this switch?

to complete the circuit for a normal relay, a switch needs to bridge 12v and the signal to the relay. those 2 only. For the LED on the switch to work, you need 12v and gnd. Im pretty sure that the ground exists only for the led to function and not the switch, though you could take the switch apart and see where they all go.

let us know. I'm going to guess the switch bridges red and white, and red splits 2 ways, one to switch, one to led, while black is the other leg of the led.

Not 100% sure about that particular kit but I have seen some similar ones at Canadian Tire (Canadian auto parts chain) and IIRC those sets do NOT use standard automotive relays. ie. the contact arrangement on the relay differes from the standard auto relay. It is for that reason that I am avoiding the pre-made kits and assembling the parts myself.

This way I can find compatible relays at pretty much any auto parts store.
