Just got new 31x10.50 tires. Just wondering how low before I'm at risk for blowing a seal/bead. They are 31x10.50 on 15x7 rims. 50psi max. 6 ply..

First off your Cherokee weighs around 3600 lbs give or take. You should run about 30 PSI give or take on the road.
Depending on where you wheel you should be able to air down to 10 - 12 lbs without issues. Rocks about 12, snow maybe 8, these numbers are for radial ply tires.
I usually air down to maybe 14 psi, and drive on the highway 10-12 miles at 50 -55 mph on a fairly straight road to heat up the sidewalls, so they will flex when aired down. ( The more your sidewalls flex the harder it will be to blow a bead. )

Okay thanks! I'm new to the larger tires.. So I should still run 30-35 psi on road then When i'm off road I can go down to 12ish?

30 psi would be starting point for me, then check to see if the tread is touching all the way across if the outside of the tread isn't touching you need less air, and if the center doesn't touch you need more. ( Mark the face with paint or chalk to check if it is touching )
