Not trying to over think this but just a thought, could you have over tightened the U-bolts that hold the U-joint in the diff yoke? Common cause for the failure of those particular 2 cups.

My guess would be axle wrap, under torque the springs will bend up sometimes in the shape of an S and the pinion goes up. Pretty much any leaf sprung vehicle can have issues with this. Most set the pinion angle down a bit to combat this and the drag racers use traction bars which would kill your articulation.
How would I adjust the pinion angle?

They're tight, but how tight is too tight?

Taken from Dennys http://www.dennysdriveshaft.com/freq....html#faq_id13

1310 series and 1330 series should be tightened to 17 ft/lbs and 1350 series to 20 ft/lbs. You should never tighten the nuts on any u-bolt excessively. This will cause the cap to distort and the u-joint will fail prematurely.

Guy I work with had a shop replace his, he is a bit mechanically stupid and didn't think to ask for help, and they overtightened his and it spit out the shaft about 5 miles down the road. Tore the tail cone of his t-case in the process.

Yeah depending on how tight it can be a few miles to a few thousand miles, in the end too tight is too tight. I see this all the time here at my shop that was why I suggested it.
