To find the exact ratio you can count the number of teeth on the ring and divide by the number of teeth on the pinion. To get a rough estimate you can jack up the rear and rotate the tire and count how many times the yoke spins like no_rdplz mentioned. It should give you a good idea of what it is.

open diff jack up one side turn the tire one revolution and count the turns the rear yoke goes and double it
