Haha terrible idea right? Well here's the thing. I installed a aem brute force intake recently but because a have a tb spacer its a lil high and just barely touches the hood on one of the cross support ridges. I'm wondering if I can grind off or cut out a little two by two chunk of that cross piece to let it clear, or will that cause my jeep to explode

Youll be fine. If the Cherokees had spring hinges or the lift struts like those on the rear hatch it would be a little bit of a concern but since gravity closes the hoods on these things, it'll be just fine.

X3 on the tb spacer, it might make a decent paper weight.
