I don't know about rotors but I'm currently running a set of the Duralast Gold C-Max ceramic pads from AZ. After the last (almost 2 years) of a daily newspaper route (85 miles daily and 130 on Sunday) with A LOT of stop-n-go, they are holding up very well. I hear good things about EBC but they're out of my price range.

I have akebono proact pads up front with ebc slotted rotors running 265/75/16. They are great. Same friction material as chevy full size trucks. Nothing special about ebc rotors, a great cheaper rotor is centric premium, they have coated finns and hubs to keep from rusting.

Heard good things about the Duralast Gold pads also.
For the rear (if you have the c8.25 axle) you could also consider swapping in disc brakes instead of the stock drum brakes. ones from a KJ Liberty directly swap, and ones from a ZJ Grand Cherokee do also with a small bit of grinding on the backing plate.
