Default 96 xj overheating and dies.

I have a 96XJ 4.0HO. Running 33's, nothing fancy. The problem I have is I can get it running for about a day, smooth as butter. Then at random, it'll start sputtering, overheat and die before I can pull over. I have been chasing this for a year now. I have continuity checked, ohmmed out and checked voltage on every engine sensor. Parts I've replaced with new: (sensors) CPS, cam position sensor, map sensor, throttle position sensor, (fuel related) fuel injectors, fuel pump, fuel filter, gas tank (spark related) spark plugs and wires, cap and rotor, distributor, coil (cooling related) head and gasket, water pump, radiator, fan and clutch (fan does not have a shroud yet). No idea what to do next with this thing. I really want to stay positive and try to make this thing work, but let down after let down, I'm considering selling it and not getting another Jeep. Any advice would really help.

I haven't checked right after it dies. I will check that when I get it home as all my tools are there today. I'll check into an ECM as well.
