I've already trimmed my fenders just trying to save some money so I don't have to buy wheels and tires after I install my lift given I am replacing my engine too
I have 32's and had to get wheels that had a significant offset. I borrowed my buddies 31's on stock wheels off his wrangler, and just like on his they rubbed pretty good on mine- with no spacers. Don't know how far you would have to go, or more importantly how far you can safely go with spacers. They'll work for now as long as you don't mind a little scrubbing on tight turns

I run 'em, 33x12.50 Big Horns on stock 15x8's w/ 5" bs. I ran 34x10.50's on the 7" wide steel wheels prior to these.
They're very close to the springs in the back, and a wider tire would probably rub a little. I have maybe 1/2" clearance back there between the spring and sidewall. Same tires on a 7" wide wheel might not work though. Mine are Wrangler 8" wheels. I like them tucked in tight.
