I would say a 25 yard mud dash and some sort of hill climb or dirt track
doesnt have to be all trails right? then compete with your buddies

Ive also see concrete road barriers used in some unique ways. Check out jeeptoberfest 2011. They had some neat obsticles using concrete barriers and pipes.

Couple down logs, wedged between trees, backside buried. Since you mentioned having woods they should be easy to come by. Leaving sawed off stumps provides some entertainment.

You can never go wrong with a big mud hole... But you need a winch... Also just big ditches and hills!
