When my gauges aren't possessed I usually run 35/40PSI on the highway, temp ranges between 210-215 unless it's a hot/humid Iowa day then it creeps up around 220 for a bit and I assume the fan kicks on around here as it jump back down.
My oil gauge, or sensor, is shot though so most of the time I'm "running" 80psi.

I have an 89 4.0. I run about 40psi and my temp is about 200. Is your electric fan working? I used to run hot then I installed a 3 row radiator several years ago and it made a difference. Make sure you have a good mechanical fan and fan clutch along with a good fan shroud. The fan shroud is very important.

Not trying to be rude or anything....but who are you talking too?
If its me...my cooling system is definitely doing its job.
But I sometimes worry about my oil pressure, since it runs about 20psi when hot....?

I am pretty sure he is talking to me. If there is a problem it is the radiator everything else is new and the e-fan is working. I never see a "drop" instantaniously kind of what you guys see its always a really slow cooling after I get off the highway. Is the tranny cooler like the mini radiator infront of the radiator, if so I have it.

Trans cooler, is like a VERY small, tiny lil, 5"x10" radiator in the corner somewhere.
I have the In-Radiator trans cooler. As most probably do.

When the tranny fluid temperature goes over 210°, the preheater acts like a cooler.
LOL I constantly get that little yellow light next to the letter "E". It's not as bad after I seafoamed it though. I used to get like 14 city, 17 highway. now I get like 17 city, 20 highway. And I drive with a lead foot most of the time
