I had 30" tires under my 2" bb on my first XJ and had slight rubbing when turning the wheel to full lock, but that was resolved with just a little bit of trimming. 31" tires would be too stuffed for my personal tastes.

I have 31 x 10.5 on my 2" lift. All I had to do was adjust the steering stops to prevent the tyres rubbing on the chassis on full lock.

You may want to consider fitting longer sway bar links as well.
