Not that hard at all, just be careful and take it slow. Make sure all hoses are drained and fluid is out of the rad before removal. Then simply slide out.
Also if you dont have one already I would highly recommend getting a haynes manual for your GC.

If haven't got a replacement for your radiator yet...
There are lots of radiators available out there and all you need to do is to choose the right one who can get the job done....
Silla Jeep Grand Cherokee Radiators can be an option...
Or you can also look on ebay...
