Rough Country is a good lift kit, but everyone I've known to have installed one said the ride was much bumpier - especially if they drove in mine, which had the same height lift. Teraflex 3.5" lift is a pretty complete kit, which is what I'm running with the 3" spacers.
Running 33" your definitely going to be doing a bunch of trimming, how much depends on how serious you take it offroad. It's one thing to clear when turned all the way, and quite another to clear turned sharp and compressed. I've cut a good 2-3" all the way around.
Death wobble wasn't an issue for me till I added the 3" spacers. Teraflex makes a high steer kit that works great, but and solution that gets your tie rod and pitman arm as close to parallel as possible will correct that.

I don't see why you would want or need to drop your transmission lower with any lift kit. Maybe if it didn't come with longer lower control arms it might shift things off a bit, but that's correctable. If you have everything dialed in right, then you won't have death wobble or put undo strain on any one part.
Using spacers from your cross member though is a really bad idea. You do understand everything that is counting on the strength from that one piece, right? It's supporting your transfer case, your transmission, as well as the back end of your engine, not to mention handles the torque and twist of powering both axles. Maybe if you used a solid piece of steel that was the size of your frame rail, it wouldn't be too bad, but using washers - while it will work, will make the cross member weaker and more prone to shear those bolt. With only 4 bolts holding that piece on, I really wouldn't risk it.
I lifted mine 6 1/2" and didn't need to lower anything.
