What temperature is gauge reading?

Temp Gauge easily Pickup to 210 and stays up
I just had this problem with my temp gauge after changing headgasket on it. My temp gauge always stays up at full hot temp. At start up goes to nearly 200 right away. I change all new sensors but still stayed the same. But the engine cooling is perfect. Can you help me? tnx

my 96 xj sport runs just under 210, after a nice warm up, and often runs slightly lower, a bit more than halfway between 210 and the mark below it. Just getting ready to hit 200k miles
