I'm on stock ride height for my 235 tires (which is about 31 inch right?). Anyway, would a 2 inch lift be what I'm looking for. I don't want to get too high off the ground, and that's why I 2 inch sounds nice (even though it still wouldn't help with getting my wheel to full lock).

Go with a 3". Its not that big, but big enough to get through most stuff.

How much of a handling difference will there be though? My guess is it's very minimal but I can get through most stuff just fine with my stock ride height right now, so I'm doing it more as insurance JUST incase, plus better look with these bigger tires.

235/75R15 is about 29.5" high and 9.2-ish wide. 2 inches is good. Probably use some ZJ V8 Upcountry coils in front + additional spring isolator.
For rear, either bastard pack or some OME Med-duty 2" lift leafs.
