Very high oil pressure, low temp gauge

I have a 96 country that runs very strong, no outward issues or noises that are engine related. I am second owner at 112K miles and now have 125K.
I took a pic of my gauges while running 65 mph.
Temp is low as you can see (often much lower)and oil pressure is high, always unless at idle when it drops to 40. I have ordered an oil pressure gauge and will be testing this weekend.
Just looking for possible feedback based on what you see.
Not much of an engine mechanic, but I am ok on the rest of my XJ.

That's how my '96 gauges run. Temp gauge will climb to a bit under 210 at max. I just redid my cooling system and both gauge sending units are MOPAR. I've got both an infared temp gun and a mechanical oil pressure gauge I'm going to check things with at some point just for the heck of it.

On low temps...Looks like your thermostat may be stuck open. They are less than $10
Also with a hotter engine your oil pressure should come down a bit. But almost 80 seems fishy.
