Temp gauge kills engine

Temp gauge kills engine
my jeep is a 1999 cherokee sport 6cy.
when driving and up to norm temp range the temp gauge just starts to drop
and the engine will die when it hit the lowest temp but I know the engine is not cooling down that much . Then it wont start if the temp gauge doesn't register . The weirder thing is if I disconnect the wires going into the temp sensor on the thermostat while its running it doesn't effect the read out of the gauge .
The electric fan also hasn't worked for some time .
Any Help would be great.
