It's a fair amount of wrenching, but straightforward. It took me a few afternoons but I'm an old phart with bad knees and arthritis. A spry young'n could probably knock it out in a day no problem. Not all that expensive and a great upgrade with much better braking and easy servicing for the future.
I used one of Big David's conversion kits and got the necessary new parts through rockauto.com. Additionally, 1991Jeep_Man came up with custom brackets that make mounting the brake hoses a breeze. Well worth it if he's still offering them.

Well, I just put new shoes and hardware but the drums got their final turn so I'll be switching to discs in a year or two lol. Thanks for the info though, that's definitely going on the wish list.
91 Cherokee XY here. Really appreciate this update. Mine are horrible. Seems to get worse as they heat up. Reversing slowly up the driveway after a drive sounds like a tortured cow screaming. Taking off from a light after breaking sounds like the Emergency Brake is on, but it drives quiet on the road. This weekend was going to try and figure out a way to plug the rear brake line, to eliminate them completely and rule out wheel cylinder. FIRST I'm going to try and unhook the emergency brake NOW.
**embarrassing update: So have been 'living' with the noise and still assuming brakes related to ABS, or something. Finally got a break from another project [or 2] and pulled them apart again to troubleshoot. Decided to invite a 'real' mechanic over this time. I convinced him I should take the back cover off the rear diff, due to 'clues' he noticed regarding slack in axles and details I gave him. Long story short, I opened a different thread regarding my Dana35 rear differential after finding a few chunks in the bottom and other clues the 'clutch things [cracked 'rings'] and deformed carrier might actually be the issue.
