So awhile ago I found some coolant under the rocker cover (haven't been able to take it to a mechanic to see what it actually is) and I'm wondering what the best option would be
I could get a head from an older model and put on but I'm not 100% what ones it would be or get a completely different engine.

New heads are available from Clearwater. They have an excellent reputation on Jeep forums.
However, the question that has to be answered is, "How much damage has already been done to your bearings?"
If your oil pressure is still good, you are probably okay. Put a new head on it, flush out the old oil and get on with life.
But stop driving it! Every mile increases the likelihood that you will need a complete rebuild.
I've looked at Clearwater but they don't ship to Australia.
I havent driven it since I saw it but last time I did the oil pressure was good (can't remember what exactly)

There are probably some good machine shops in your area that rebuild heads. You could get really old-fashioned and make some calls....
There are other options for heads. I don't know the details, but I know that a TUPY head from some of the later Grand Cherokees will work. They were made with the 4.0 for a few more years after the XJ was discontinued, and the TUPY head fixed the casting flaw that caused your head to crack. If you can find one in a junkyard and have it rebuilt, you will be good to go.

I took it to the mechanic and he said the head is fine. So I'm not sure what it is
I would not call that head fine. That bit of coolant in your opening post is where the head is cracked. Keep driving it like that and the coolant will mix with the oil and take out your bearings.
