It could be 20 different things. What color is your coolant? Was there any white smoke coming out of the tailpipe? Is there any water in the oil? Any maintenance ever done on the cooling system? Did it spring any leaks?

Like 1996sportXJ said. You need to give some info for anyone can really help. It can be anything from a bad t-stat to a cracked head. Hopefully not the head since you have a 00 that has 0331 head the tend to crack when over heated. Your best bet is not to drive it until you get it figured out. Because if you don't have a cracked head now and you keep over heating it is very possible that you will.
Give the info so everyone can give you an idea what to look for.

#1 cause of magically disappearing coolant is a cracked head with your year XJ. Drain the oil and check if there's coolant in it. I hate to say but I'm going to guess that there is.

I have a suspicion this the problem with mine. Once you drain the oil, how do you determine if there's coolant in it?

The coolant is a different color than the oil and water (coolant) is heavier than oil. It will be really obvious.

Water and oil are polar opposites, they don't mix. There's some science for you on this beautiful Friday morning!

i have one for the disappearing coolant that i just noticed on my 94 xj. i found that depending on where you live the radiator could crack from age and only leak a very tiny bit only while it is running or while your driving and the bad part about the crack is that it wont leak while sitting. but to the over heating issue i have that as well and i actually replaced almost every component (hoses, thermostat, radiator, water pump, heater core valve) except for the heater core and thermostat housing itself. any sugestions???

If you pull the dip stick after running the motor hot, it *should* have a beige creamy colored/texture on the stick if coolant is in the crank case. You would notice that immediately if it was mixing. If not then get a little flash light and look for visible fluid leaks. If you don't find any then I would go with replacing the thermo, it is not that difficult if you've never done it. If it still overheats after this then I recommend getting your system pressure tested. If there is a leak this test find it quickly.

Yup. I had that problem for a while. Radiator was leaking, but mostly only during driving. Every once in a while it would leak a lot while parked. Replaced radiator and fixed that leak.

only if it is overheating while idling. I had this exact problem on my '88 Pioneer and a new fan clutch fixed it. But a bad fan clutch would not explain the magically disappearing coolant.

Dual electric fans? Are they both working properly? One constantly running, the other kicks on at 218 degrees?

As for the disappearing coolant, it doesn't magically evaporate. It's going somewhere. You're either leaking somewhere or it's going straight into your oil. Time for some more investigating
