No doors unsafe?
I'm going to answer based on my fire/rescue training.
I can see an increased concern in Mechanism Of Injury with a doorless XJ in three situations.
Front end impact--- The doors add structural integrity to the unibody. XJ's are lousy in front end collisions as they tend to "fold like tacos." Removing the doors will make this effect worse. I understand that some may argue they've been in this wreck and that wreck and been fine. But bear in mind. If you're doing 45 and the car that swerves and hits you head on is doing 45 that is a 90 mph collision.
Side impact- Basically if you get hit on the drivers side and have no door it's you vs the hood of the car hitting you. This is by far the scariest scenario.
Rollover---- Even with the seatbelt on your arms and, worse yet, your legs can flop around and get pinned outside easier. Not to mention that whatever you're rolling over can more easily intrude into the passenger compartment.
In short I'd say your mother is correct. Good sturdy tube doors will make it somwhat safer if they are sturdy and have quality latches.
And if you don't wear a sealtbelt you really don't need to be doing this.

What about all the CJs, TJs, YJs, Land Rovers, Range Rovers, Dune buggies, yada yada yada. No doors since the war. Yes they have a frame, but YOU still crash into the dash in a front end collision. Make me want to stop driving one? NO. Life is a crap shoot. Live like you want. Just don't purposely be stupid.
No one is saying he should not take the doors off and ride. What I am saying is it's obviously not as safe as keeping the doors on.
Riding a motorcycle without a helmet is the epitome of stupid and I do it on a regular basis. (Well, given the novelty helmet I wear I might as well be.) This is a personal choice and I support your right to make it. I've given consideration to going doorless in my XJ and may still do it.
But I'm 41 years old and can make that decision on my own.
What I won't do is give this young man validation to his "just as safe" argument with his mother.
