Is my jeep running too cold?!

The vast majority of 4.0 engines run (and should) between 200-210 degrees farenheit, give or take a few.

I finally got a temp gun and I scanned the tstat housing and it read around 187.. Then I scanned the middle of the block and that read 205. Mean while the gauge was reading between the first tick and 210. So should I declare everythings fine or should I still swap the tstat to a 195..??

Nothing wrong at all with 187-205 actual.
Dash gauge may be wacked. Check electrical connections/grounds, etc.
