the bearings are a breeze, rods are a piece of cake provided they are standard size. you should probably plastigage them to make sure you dont need to go oversized. mains are a bit harder but not too much. same thing on those. plastigage them to verify size. a new pump and bearing should bring your oil pressure right back to original and you wont even have to pull the head off unless you want to do the top end also.
how would you replace the bearings while engine is still in the jeep

it's by far NOT the wisest way to approach that project... that being said... is it actually impossible to do? no. But it's definitely a backyard mechanic fly by the seat of your pants and hope for the best.
Some might chime in now that this thread has been brought back from the dead... and say oh sure you can do that... like I said... can it be done? yes... but I certainly would risk it on my own engine especially if I didn't have another set of dedicated hands to hold things in place while doing it.
I had the same issue and spent a lot of $ in parts and services (pump, sender, new oil, expensive filters, etc).
I bought on eBay (for a few bucks) a mechanical tester ----> Guess What... Pressure was a bit low but perfectly acceptable...
The issue was the dashboard gauge itself.. I did calibrate it properly by moving it by hand to the same reading as on the tester.
