So, if i was to come across a posi in a jeep with the same rear end as mine, and i was to pull it and take it home (junkyard)...would it be a simple swap or would i have to mess with the backlash, bearings, and all that fun stuff?

If yours doesn't have a posi/limited slip in it now you'll have to change the carrier. That means you'll have to check and reset the backlash of the ring & pinion gears. And unless you're going to re-use your ring/pinion gears make sure the other rear has the same ratio that yours has so it matches the front axles gear ratio.
