Default i just bought a 95 cherokee and have a few questions

i bought the jeep with a supposed blown head gasket.i pulled the head off and found a burnt valve.while i have the head off i wanted to do a few things to help make some extra power.here are my questions
i was wondering how much can shave off the head and not have piston to valve problems?
is there a thinner head gasket available?
someone gave me a 2000 grand cherokee 4.0 blown.i heard the intake manifold is better should i swap it?
i would like to change the header? i was looking into a pacesetter header with a pacesetter catback.any suggestions???
should i have any port work done to the head while its off?is it worth the money?

and i will take any suggestions you can give me.thanks
