The transmission?

They are different size nuts and they have these little plastic pieces sticking out on each end and the tubes seem very loose and wobbly.

How do you get those off, I have not tried yet, I didnt want to touch then until I have new ones to install.

Those are compression fittings. The tubes are flared at the end. Unscrew the nuts any they come right off.

Do they separate from the tubing or is it like a flared end where the nut cant come off unless you cut the tubing?

The flared ends will prevent the nut from being removed. I'm not sure about a new set but I imagine they come with the nut already installed
