Picked up what I believe to be a factory hitch from the salvage. Ordered JCR nutstrips to mount it. I want to get new bolts to mount it, but don't know what size to buy. I will get grade 8, and probably stainless.
What is the diameter, pitch, and length of the required bolts?

They are 3/4" head bolts that come with it. Course pitch and need to be at least 1.5" long I would guess.
You do know it comes with grade 8 bolts though right?

Take the nut strip to the local hardware and start trying bolts, each nut strip maker (there's at least 3 I can think of ) use different thread and pitch bolts
