high oil pressure after Valve C Gasket swap

About two months ago I swapped out my Valve Cover Gasket. It went fine and I don't seem to be having issues. I did notice that a few weeks later, when I cold start the Jeep, the oil gauge goes sometimes all the way up to 80 and wont come back down to the middle of the gauge until the truck is warmed up. It fluctates in between there when driving.
Should this concern me? And just out of curiousity, which is worse: too low of pressure or too high?

Not if the oil pressure is actually 80 psi, and not just a oil pressure sensor defect. The oil pump pressure relief valve is set to 75 psi. If you are seeing 80 + psi on a mechanical gauge, there something wrong with your oiling system, like a spun #1 cam bearing.
