Head swap/ exhaust compatibility

Head swap/ exhaust compatibility
Just verified my cracked 0331 head. I've read a ton of other posts about it and compatibility issues when swapping out for an earlier casting and seen the 'adapter' plate that some people do.
I was just wondering if it wouldn't be easy to replace the exhaust manifold with an after market header for whichever head I put in and then have a shop weld in a down tube to connect the rest of the system.
I'm in CA, but my Jeep was born in OR, so I only have the two O2 sensors after the collector flange. Any thoughts?
