I would definitely check more before changing the engine wiring harness. The connector on the back of the gauge cluster likes to corrode, causing erratic gauge readings. Just my personal opinion, but I would definitely check that before you get too carried away.
The temp. sensor uses a 5V reference, then changes resistance with heat. The check engine light will come on if the sensor is out of range. Typical range is 0.5V-4.5V. If it was a problem with the wiring harness it would most likely cause the sensor to read out of range, causing the check engine light to come on. If the check engine light is not coming on I would doubt (from my experiences) that there is a problem with the wiring harness.

I actually hit the junk yard to find the wiring harness for my 98 Cherokee Sport but could not find the proper year. So I took what they had out of a Grand Cherokee. I just changed the temp sensor out in mine to the one used in a Grand Cherokee and put the harness on from the junk yard and it worked like a charm and solved the problem. No crazy temp readings now and no check engine light on now.

In my XJ, a 92, the temp sender is at the very back of the engine, next to the valve cover. What year did they drop that and pair it with the temp sensor at the t-stat?
Just curious.
