Coolant system/electric fan problem

Coolant system/electric fan problem
'97 XJ 4.0L
I cannot seem to get my electric fan to function properly.
I have replaced the thermostat, coolant temp sensor, and rad cap.
My temp climbs to 210° and stays at 210° +/-5°
If I unplug the temp sensor, the fan kicks on. What am I missing here???!!

200-210 is normal temp for these jeeps. Fan will only come on with ac or when temps reach 218.
If yours is cooling right and staying around 210. The fan doesn't need to come on.
