When properly working, i.e. not clogged, a catalyst has negligible effect on fuel use nor power output. If clogged, it can do lots of harm to both. As long as it works, leave it attached. The folks on the trail following behind you will appreciate that.
I have temporarily removed a cat and ran a test pipe when I had a clogged cat, and noticed no difference once a new cat was installed. If you are seeking power and fuel economy, removal of a good cat wont gain you what you seek.
