I'm going to change the oil in My 2000 xj's 8.25 tomorrow

so, is 75w-90 the way to go?

is black rtv the way to seal or or should i use something else?

Whats the torque spec for the bolts? (probably pretty light)

yep....and tight enough to get good squeeze out.
