97 Cherokee Overheating and Stopping
I have a 97 Jeep Cherokee. The problem is that when I am driving for long periods it'll overheat and stop on me in the middle of the road. And I will have to wait about 20 - 30 mins in order for it to start again. Or If I'm lucking, I'll make it to my destination but that I have to wait for it to cool down enough for it to start again.
Its not leaking any water for the water pump or the radiator. Their is coolant in the radiator and in the reservoir.
This problem usually happens in the summer when its hot. So in those 3 - 4 months, I have to be very careful where I drive. I either to one place and stay there or I do my errands in the morning where the temperature isn't warm and I'm not worry about it stopping on me
Has anyone had this kind of problem before. What should I look to change and replace?

The cooling system in these things is a regular maintenance item, most bits are considered wear parts. If this has been happening for several years (you alluded such with "usually in the summer"), with no maintenance like coolant changes, there's a high likelihood that you'll need to replace everything in the cooling system. While it may be only one part that's causing this, if the rest haven't failed, they will soon. Budget for a new water pump, Mopar thermostat, radiator, hoses, and clutch fan. You'll need to do a complete flush of the stuff that's left (block and heater core).

In my Jeep, the thermostat will either reach 210 or go over it just a bit before it shuts off. If I get to my destination, and the temp is about to reach 210 then that's when sometimes it won't start, and I'll need to wait for it cool down for it to start.

So if I understand correctly, the Jeep is not actually overheating -- 210* is within the normal range to the extent that you can say anything is "normal" when it comes to our cooling systems.
I assume you are saying that your operating temps are normally lower that 210* and when they climb to around 210* you are at risk of the Jeep shutting down?
Various components react to heat including the CPS. An easy next step would be to see is you have spark when it won't start.

Aside from the CPS. What other sensors could be heating. So could I check into replacing?
Also I found where the CPS is. but How can I be able to reach it from the bellhousing? Do I go underneath to loosen the nuts? or is there another way to get to that.

You're not overheating. Likely culprit is CPS. Try this.

Now that I know its the CPS. What is way to replace it? Since its easy to loosen from the top. How Do I go about from the section that is attach to the bellhouing.

I recently changed the CPS on my 97 by removing the CPS from under the vehicle, using a very long extension on a 3/8 ratchet.
When installing the CPS, I noticed I could lay on the engine and reach the CPS area with my right hand. There is enough room between the brake booster, and intake. I used a very short 7/16 wrench to install the two bolts...

I just changed the CPS on my jeep. It turned on rather quick. I let it run for a good 15 mins then went to the store near my house. When I got back, I turn it off and turn it on. and it won't start. It kept stalling a bit.
Is their any ideas on what could be heating up? Is there another sensor I should replace?

Where did you get the CPS from? After market ones are notorious for failing if not bad out of the box. If you installed one of those you may consider replacing it with an OEM one.

Xjs are picky when it comes to sensors. Sucks but I would replace that autozone one with a Mopar. I did mine last week and it was $87 from the dealer.

Another member here went through 3 or 4 brand new AutoZone DOA CPSes before he got the idea and bought a Mopar.
Take it back and get the real deal.
